Twice Baked Potatoes

Ingredients:

6 Idaho Russet potatoes

Mix ½ cup cheddar

½ cup Monterey jack cheese

Add 3 Tblsp. butter,

Salt and pepper to taste

6 oz of cream or half and half blend together either by hand or with a mixer

Directions:

I like to put the mixture in pie pans and bake for about 30 min at degrees 325

But you can put them back in the potato shells if you want

No matter which, I then add more cheddar and green onion on top before they go in to the oven

Try other cheeses like a combination of creamy goat cheese and a smoked gouda ,add a quarter cup of bacon and check those potatoes out the ultimate twice bake potato

These potatoes are a wonderful winter dish, and go well with sliced pork or a roasted chicken and nothing better than a glass of merlot.
