Jamaican Jerk Marinade
As a busy caterer I look for a simple and easy to put together recipe fast, but one that I know will satisfy my customers.
Ingredients:
1 onion coarsely chopped
6 green onions coarsely chopped
1 ½ tap. Ground thyme
1 tsp. salt
2 tsp. sugar
1 tsp. ground allspice
½ tsp. nutmeg
½ tsp. cinnamon
2 tsp. cayenne pepper
1 tsp. ground black pepper
1 ½ cup soy sauce
½ cup oil
½ cup cider vinegar
1 or 2 limes sliced.

Directions:
The simplest way to do this is to use a food processor.
1. I put the onions in first and process to a fine grind. if not just chop them by hand and put into a stainless bow.
2. Add the remaining ingredients and blend till smooth.
3. Place your chicken or pork in a non-reactive pan, and pour the marinade over the meat.
4. I like to top the pan with slices of lime going down the center. Cover and marinate for at least a few hours, preferably overnight.
